Vegan Mac & Cheese

½ lb. whole wheat macaroni
½ cup almond milk
1/6 cup water (more if needed)
2 Tbsp tamari (soy sauce)
½ cup nutritional yeast
1 t paprika
¾ tsp ground mustard
Pinch cayenne
1 tsp garlic powder
½ tsp salt
2 oz firm silken tofu (or more)
¼ cup corn oil
Breadcrumbs, if desired

Preheat oven to 350 degrees. Put all ingredients except macaroni in a food processor or blender. Blend until smooth; taste and adjust seasonings. Sauce will be fairly runny.

Cook macaroni, then drain and return to pot. Pour sauce over macaroni and pour into an oven-proof dish. Cover with breadcrumbs if desired, and bake until heated through, about 20 minutes. Broil at end for a crispy top.
